Guilt-Free Vegan Summer Salads: 2 Light, Refreshing, and Filling Recipes

Summertime is the perfect time to enjoy delicious, healthy vegan dishes, especially salads. In this blog post, we will share two of our favorite vegan summer salads that are light, refreshing, and filling. These two recipes are perfect for a picnic or cookout, or for any day when you want a quick and easy vegan meal. We hope you enjoy them!

Vegan summer salad: Caesars


  • Tofu (one block)
  • Lemon juice
  • Olive oil
  • Garlic cloves
  • Anchovy paste
  • Dijon mustard
  • Salt and pepper
  • Head of romaine lettuce
  • Shaved Parmesan cheese (vegan)
  • Crusty bread


Start by pressing the tofu. Wrap it in a clean towel and set something heavy on top, like a cast-iron skillet. Let it sit for at least 15 minutes to get rid of excess water. While the tofu is pressing, mix the lemon juice, olive oil, garlic cloves, anchovy paste, Dijon mustard, and salt and pepper in a bowl.

Once the tofu is done pressing, cut it into small cubes and fry it in a pan for about 6-8 minutes. Then add tofu to the bowl with the dressing. Mix everything together until everything is evenly coated in the dressing. Wash and dry the romaine lettuce and then chop it into bite-size pieces. Add the lettuce to the bowl with the tofu and mix everything together. Top with vegan Parmesan cheese and serve with crusty bread. Enjoy!

Vegan summer salad: Cobbs


  • Head of romaine lettuce
  • Chopped tomatoes
  • Chopped avocado
  • Cooked corn
  • Crumbled bacon (vegan)
  • Cheese (vegan)
  • Ranch dressing (vegan)
  • Salt and pepper


Wash and dry the romaine lettuce and then chop it into bite-size pieces. Add the chopped lettuce to a large bowl along with the chopped tomatoes, avocado, corn, vegan bacon, and cheese. Mix everything together until it’s evenly distributed. In a small bowl, mix together vegan ranch dressing, salt, and pepper. Pour the dressing over the salad and mix everything together until it’s coated. Serve immediately. Enjoy!
